
Sweet Potato Toast with Avocado

One average sized sweet potato

One average sized avocado

Directions:
1. Puncture holes in sweet potato with a fork
2. Microwave sweet potato for 3 minutes
3. Take the slightly softened sweet potato and place on a cutting board
4. Using a knife, cut the ends off of the sweet potato
5. Cut the sweet potato lengthwise into ¼ inch slices
6. Place two choice slices of sweet potato into the slots of a toaster
7. Set toaster to a high setting and toast sweet potato slices for 3-4 minutes
8. While sweet potato slices are toasting, use a knife to cut an avocado in half
9. Hold one half of the avocado and crush the innards using a fork
10. Retrieve the hot sweet potato slices from the toaster
11. Spread avocado mash on sweet potato slices
