Rice and Bean Burrito


  • 2 Tortillas

  • 1 Cup of Rice

  • 1 Can Black Beans

  • 1 Can Pinto Beans

  • Taco Seasoning

  • 1 tsp. salt


* Optional Toppings:

  • Cheddar Cheese           

  • Ranch Dressing

  • Diced Onion

  • Salsa

  • Can Opener

  • Cutting Board

  • Small Pot with Well-Fitting Lid

  1. Rinse the dry rice by pouring it into the colander over a sink, washing it, and draining the excess water

  2. Pour the rinsed rice and 2 cups of water into the small pot and place on stove at high heat. Stir in salt. Bring contents to a boil

  3. Cover and reduce the heat to medium low. Cook for 20 minutes. DO NOT LIFT THE LID or you will lose the steam that allows the rice to cook properly

  4. Open the cans of beans (using a can opener if there is no pull tab) Hold colander over sink and empty cans into the colander. Rinse with water and allow to drain

  5. Pour beans and 1 cup of water into the medium pot and place on stove. Cook on medium low heat for 5 minutes, stirring occasionally with the wooden spoon. Stir in taco seasoning and cook for another 5 minutes

  6. Check to see if the rice is ready. Rice should be thoroughly cooked and fluffy, having absorbed all the excess water. CAUTION: Hot! Blow on rice before taste testing

    1. If the water has absorbed but the rice is still too firm: add 2 tbsp. of water and return to low heat for another 5 minutes

    2. If the rice is fully cooked, but too much water remains: you may drain the water using the colander.Assemble your burritos! Place no more than 2 Tsp. of rice and 2 Tsp. of beans in the center of the tortilla, so as not to over stuff your burritos

  7. Assemble your burritos

    1. Place no more than 2 Tsp. of rice and 2 Tsp. of beans in the center of the tortilla

    2. If using ranch dressing, spread 1 Tsp. of ranch dressing on the tortilla, stay 1 inch away from the edge

    3. If using cheese, sprinkle shredded cheese on top to taste, grating with cheese grater if necessary

    4. Add chopped onion, salsa, or any toppings that suit your taste/budget

    5. Fold burrito closed
