
Black Bean Dip with Corn Chips

Ingredients:

4 small Corn Tortillas

2 cans of Black Beans
-
2 cloves of Garlic (Minced)

½ cup of Onion (Diced)

1 tsp. salt
-
¼ tsp. black pepper
* Optional:

½ tsp. chili Powder
-
2 tsp. salsa
Utensils:

food processor/blender
-
baking sheet
-
can opener
-
colander
-
cutting board
-
Knife
-
measuring cups/spoons
-
medium bowl
-
oven mitts
-
rubber scraper or wooden spoon

fork
Directions

Preheat oven to 350 degrees

Open cans of beans (using a can opener if there is no pull tab) Hold colander over sink and empty cans into colander. Rinse with water and allow to drain

Carefully dice the onion and mince the garlic with knife

If using a food processor: add all ingredients to processor and blend to desired texture

If not using food processor: add beans, onion, garlic, 4 Tsp of water and 1/2tsp. salt to a medium bowl and mash with a fork

Transfer dip to serving dish using the rubber scraper/wooden spoon

Cut tortillas into evenly sized wedges

Place in a single layer on the baking sheet and bake in oven for 6 minutes

Remove from oven and turn chips over with fork and sprinkle with remaining salt

Return chips to the oven and bake for additional 6 minutes or until golden brown

Remove from oven and let cool
