
Gluten Free Crackers and Cheese
Ingredients:

1 cup of cornmeal

2 cups of boiling water

2 teaspoons of salt

2 tablespoons butter, (cubed and softened)

cheddar cheese squares

large mixing bowl

Directions:

Preheat oven to 375 F

Measure out 1 cup of cornmeal, 2 teaspoons of salt, 2 tablespoons of softened butter, and add to bowl

Measure out and boil 2 cups of water in sauce pan. Add water to dry mix, and stir (consistency should be of wet mashed potatoes)

Place wax paper over baking sheet. Spoon 2 tablespoon portions , evenly distributed on the baking sheet. Tap the baking sheet on to table to flatten the batter

Bake for approx. 20 minutes. After 10 minutes flip the corn chips with the spatula and bake for another 12-15 minutes or until golden brown and crispy. Remove and cool

Slice cheese and add on top of crackers
